How to make easy ribs

Ingredients

Rack of St. Louis style pork ribs

Camp mix

Course black pepper

Butter

BBQ sauce of choice

Spritzing liquid

Preparation

Step 1

Preheat smoker to 200 degrees



Step 2

Remove ribs from packaging, and pat dry. Using a sharp knife, trim ribs to remove excess fat and trimmings and flap meat to shape ribs so they are uniform. Using the back side of the metal spoon, peel the back of the silver skin on the ribs and use a paper towel to remove all the silver skin from the backside. Leave this on if you want and just scour the back so the ribs release easily after cooking. Sprinkle the seasoning on the ribs on both sides


Step 3

Place ribs on the smoker at 200 degrees for 3 hours.


Step 4

After 3 hours, increase temp to 250 degrees and spritz the ribs each hour until it reaches 160/170 degrees.


Step 6

When ribs hit 160/170, place ribs in the foil wrap with a few pads of butter. Wrap tightly and continue cooking until 195 degrees. Open the foil and mop the top of ribs with a sauce of choice and do not wrap the foil back up. Close the smoker and continue cooking for 20 minutes.


Step 6

Remove from smoker, and rest until internal temp reaches 170 degrees. Serve and enjoy!
