About the Recipe
If you are looking for a way to get a pure bite of BBQ, this cut of beef and this recipe is sure to be a winner!
Ingredients
3-4 lbs of cut short ribs
Course black pepper
Lowry's seasoned salt
Camp mix
Beef stock/broth water mix in spray bottle
Preparation
Step 1
Trim hard fat from short ribs and score the back of the rib bone
Step 2
Season short ribs with the coarse black pepper liberally, and finish seasoning with Lowry's seasoning salt and the camp mix
Step 3
Preheat smoker to 275 degrees (if you do not have a second rack or elevated rack you may want to smoke at 225 due to radiant heat from the drip pan)
Step 4
Place short ribs on the top rack of the smoker and leave closed for 3 hours *this is important to build the smoke flavor!*
Step 5
Spritz the short ribs every hour with the spritz mix until the short ribs reach probe tenderness (200-210 degrees). This will take about 6+ hours
Step 6
Remove short ribs from the smoker, place somewhere to cover with foil for 30 minutes, and enjoy!

My thoughts on the recipe...
I have done a couple of renditions of this cut of meat. This is by far the EASIEST way to achieve one of the best bites of BBQ you can get, especially on a pellet smoker! If someone tells you that you cannot get bark from a pellet smoker you can tell them to pound sand! I can get smoke flavor, bark, and great BBQ from my Green Mountain Grill and each time I make this recipe when I do not go crazy with trying something new, I end up with amazing BBQ. Trim the beef, season good, smoke, spritz, rest, and eat. Legit it is that simple with this recipe!
