What types of pellets do I use?

I honestly do not normally go out of my way to try several different brands of pellets, as I have found ones that I like and that runs well in my pellet smoker. I have tried several other brands, but find for the price difference there is not that much flavor difference. Below are the two brands I stick with and always have several bags of them on hand to mix up what to use.

  • Fruitwood blend I love using the fruitwood blend for pork-related products and especially when I am smoking the cured pork belly for my bacon.

  • Classic blend and the Charcoal blend and I love to mix these two together. They both have amazing smoke flavor and can never go wrong with the free shipping that Pit Boss offers. I find that the only downfall with the charcoal blend is that due to the pellet color, it can throw off your low pellet alarm from time to time.

  • Plum Wood These pellets give great flavor if you can get them to cooperate with your smoker. Knotty Wood Barbecue has posted a video acknowledging that they can cause clinkers (I have had to deal with this several times myself). They can be a pain, but the flavor is next level!

  • Almond Wood I use these as my mixer pellets as they have a light flavor. My mix is usually a 50/50 blend with their plum wood pellets.

  • Almond Cabernet Wine Blend These are an incredibly unique pellet! I was blown away that you actually get the wine flavor on the food you cook with them! Highly recommend for a unique change of pace for a pellet!

My advice is to change it up, find out what you like and keep trying other things out. Always try to have fun and make some great food with what you have!
